Tapioca is the starch from a cassava root. It can be used as a food, in bread or as a thickening agent in puddings, soups or juicy pies. Cassava plants are native to the West Indies and South America. As the plant was introduced to other parts of the world, tapioca became a big hit with cooks everywhere.


*Bonus Recipe*


Chocolate Tapioca Pudding

2 cups milk
1/2 cup honey
1/4 cup quick-cooking tapioca
1/2 cup semi-sweet chocolate morsels
1 teaspoon vanilla extract

DIRECTIONS

1. In a medium saucepan, stir together the milk, honey and tapioca. Let it stand for 10 minutes.
2. Place the saucepan over medium-high heat. Stirring frequently, bring the mixture to a boil. Continue to cook and stir for 3 more minutes.

3. Remove from heat. Add the chocolate morsels and vanilla. Stir until the chocolate is melted and the mixture is smooth. Serve warm or cold.

I remember Mom making this but she didn't use choc chips did she? Cocoa maybe? I loved it. I think I've made it once or twice.
