It's Pick Blueberries Day (7-14-09) ... Bonus Recipes!!
Why are people eating so many blueberries? Because they rank the highest of all fruit and vegetables in anti-oxidants that fight aging. (Their powerhouse performance comes from the same substanace that makes them so blue.) They're also high in fiber, fat free and taste great.
*Bonus Recipes*
Grandma's Blueberry Pie
1 8-inch pie shell
Pastry stick for top crust
1/4 cup sugar
1 15-oz can of blueberries in syrup
1 1/2 tablespoons flour
1 1/2 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon cinnamon
1. Preheat oven to 375 degrees F (190 degrees C).
2. Drain the liquid from the can of blueberries into a medium saucepan. Mix the sugar, flour, salt and cinnamon together in a bowl. Add to the blueberry liquid. Heat, stirring constantly, until thick and smooth.
3. Stir in the butter until melted. Add the berries and mix gently. Pour into the unbaked pie shell and cover with a top crust.
4. Bake 30 minutes, or until well browned.
ENJOY!
Fresh Blueberry Salad
1/2 cup mayonnaise
1/2 cup plain yogurt
1/4 cup orange marmalade
2 teaspoon lemon juice
1/2 teaspoon black pepper
3 medium peaches (cut into wedges)
2 cups fresh blueberries
2 cups cubed, smoked turkey
1. In a mixing bowl, combine the mayonaisse, yogurt, marmalade, lemon juice and pepper.
2. Add the peaches, blueberries and turkey. Toss to mix until well coated.
3. Serve on lettuce leaves with crusty bread for a great summer meal.

In celebration of the day, I bought blueberries today. Haven't decided yet if we'll eat them as is or if I'll freeze them until I have time to make Blueberry Buckle.
The salad recipe sounded a little odd. I'd have to think about it.
